パプチャキャ Papoutsakia



Papoutsakia means “lovely shoes”. This is almost the same ingredients and direction as Mousaka.

Vegetables in Greece are much bigger than Japanese one, so there are many staffed dishes in Greece. When you try Papoutsakia in Japan, something thicker eggplant, like an American eggplant is good for it.

材料  5人分

米なす 5個

合挽肉 400g(またはおから200gと合挽肉250g)



砂糖 ひとつまみ


パセリ 一束


オリーブオイル 100g

小麦粉 大さじ3

牛乳又は豆乳 200g

卵 1個

ナツメグ 少々

ピザチーズ 大さじ2



5 American eggplants

400g minced meat (or 200g of Okara and 250g of mince)

1 onion finely chopped

2 tomatoes finely chopped

pinch of sugar

salt & pepper

a bunch of parsley


100g Olive oil

3 tablespoonfuls flour

200g milk or soy milk

1 egg

2 tablespoonfuls pizza cheese

salt & pepper












①Cut the eggplants in half lengthwise and soak them in water, so as to skim the scum.

② Dry the eggplants well, coat them with Olive oil, and avoid scorching, bake in an oven taster until they will be tender.

③Saute the minced meats in fry pan without oil. If you cook without Okara, now you drain excess fat in a colander, and back them to the fry pan and saute with onions and Okara.

If you cook with Okara, you don’t drain the meat fat, put and saute with onions and Okara.

④Put tomatoes or canned tomatoes, suger, salt, pepper, and parsley, and cook until almost no liquid remains in pan.

⑤Let’s make Bechamel.

Fried flour with olive oil to avoid scorching. Add milk or soy milk little by little and stir it constantly the flour is no lumps.

⑥Add salt, paper and nutmeg to taste and remove from the heat, then mix pizza cheese and beaten egg. So as not eggs get hard, you should make little higher of eggs’s temperature with hot Bechamel by bits.

※If you don’t use cheese and eggs, you just put some more salt and nutmeg. This is also simple and lovely Bechamel.

⑦Staff ④and ⑤ into the eggplants. Put them on the lightly-oiled oven pan and cook 15 to 20 minutes in an oven preheated to 200 degrees until it will be golden on top.
